Cheesecake is always a winner and one of those foods that is always missed when going dairy free….
Unless you make you own
Dairy Free Cheesecake
Crust
Ingredients:
3 tbsp coconut
3 tbsp pecan meal
Some broken pecans
Coconut oil (melted)
Directions:
Mix together with enough coconut oil to bind lightly
Toast in oven
Cool
Dairy Free Cream Cheese
Ingredients:
1/2 can coconut milk
1 tbsp lemon juice
Sprinkle of xanthan gum
Directions:
Mix ingredients until smooth
Allow to set over night in the fridge
‘Cheesecake’ Filling
Ingredients:
1 Cup Cooked Pumpkin
1 Cup Cooked Cauliflower
1 Cup Dairy Free Cream Cheese
Sweetener of choice
1/4tsp Pumpkin spice blend
Sprinkle of xanthan gum to thicken
Directions:
Blend in food processor until smooth
Assembly:
Sprinkle 1/2 of toasted coconut and pecans in bottom of pie plate.
Place filling on top of crust.
Sprinkle remaining toasted coconut and pecans on top of the filling.
Place in the fridge to chill.
